JERUSALEM SALAD
Serves 6

2 small cucumbers, seeded and chopped
1/2 small red onion, sliced in thin slivers
2 tomatoes, seeded and chopped
1/2 cup minced parsley
1/4 cup minced mint, optional
1/4 cup almond cheese, seasoned with sea salt, optional
1 cup sliced black olives

Lemon Dressing ingredients:
4 tbsp olive oil
4 tbsp lemon juice
1/2 tsp sea salt or to taste
1/4 tsp black pepper

Tahini dressing ingredients:
4 tbsp olive oil
4 tbsp tahini
4 tbsp water
1/2 tsp sea salt or to taste
1/4 tsp black pepper
dash ground cumin
dash cayenne pepper

Combine all dressing ingredients by hand or in a blender, if making the tahini dressing. Toss cucumbers, onion, tomatoes, parsley and mint with dressing and arrange on a bed of romaine lettuce. Toss with crumbled almond cheese if desired, olives, additional minced parsley or mint and additional dressing.

This juicy, scrumptious salad is a wonderful
accompaniment for a falafel or hummus platter.
