3 Medium Zucchini, peeled, cut in chunks
¾ cup Tahini
¾ cup Sesame Seeds, Soaked
1/4 cup Olive Oil
2 Cloves Garlic, crushed
Juice of 2 Lemons
Dash Cayenne Pepper
1 tsp Celtic Sea Salt or to taste
water to thin, about 1/3 cup
Crudites to serve
Minced parsley and paprika, to sprinkle
Additional Olive Oil, to drizzle
Puree all ingredients in a food processor.
Sprinkle with parsley and paprika, drizzle with olive oil and serve with crudites.
